Guerande Salt Marshes - Marais salants de Guérande - Aerial - UAV FPV
Guérande's sea salt is one of the finest harvested in the world, and consequently is used by great chefs such as Paul Bocuse. Awarded the national "site remarquable du gout" in 1996, Guérande's salt marshes represent an undeniable contribution to the area's heritage and economy in terms of agriculture, culture, and gastronomy. Sea salt is still produced in the salt marshes around Guérande in the same way today as it was a thousand years ago, i.e. hand-harvested, using wooden tools. Sea-water is allowed through the dyke at high tide and flows through a network of pools. Salt workers are able to draw off water from the reservoir and direct it along ditches. Then the process of evaporation begins thanks to the drying action of wind and sun. The brine gradually becomes more and more concentrated until it arrives into the last salt pan, called the "oeillet" where salt crystals start to form. The the paludier are able to harvest the "coarse grey salt" at the bottom of the pan, and the finer, delicate "fleur de sel" at the surface of the pan. Two types of sea salt are produced: - The grey salt which is collected daily from the bottom of the pools. It is "moist" and unrefined. It remains a light grey colour, because of the clay from the salt flats where it is collected. It is used in cooking, including the locally renowned meat and fish cooked in "croûte de sel"- salt crust. Unwashed, unrefined and additive-free, it adds flavour to traditional family cooking. - The finer "fleur de sel", is skimmed from the surface of the salt ponds. It enhances the subtle flavours bringing out the taste of even the finest dishes. Bien avant la construction des marais salants, tels que nous les connaissons aujourd'hui, une autre technique de production de sel marin existait depuis l'âge de Fer. Cette technique consistait à récolter du sable ou de l'argile salé durant l'été et à opérer un lessivage pour extraire une saumure très concentrée. Cette dernière était ensuite versée dans des récipients en terre et chauffée dans des fourneaux d'argile jusqu'à cristallisation du sel. La technique ignigène (c'est-à-dire par le feu) était répandue sur toute la côte armoricaine. Cette technique a engendré une déforestation. La technique actuelle d'exploitation des marais salants est antérieure au 9è siècle. La création des salines s'est étendue sur plusieurs siècles. Vers l'an 1500, les marais atteignaient 80 % de la surface actuelle. Entre 1560 et 1660, grâce au développement du commerce maritime, 2500 œillets seront construits. Les dernières salines ont été construites vers 1800. Mais un abandon progressif commence dès le milieu du 19e siècle face à la concurrence du sel de mine, à la baisse de consommation du sel alimentaire comme produit de conservation et à l'amélioration des transports par voie terrestre.

On Vancouver Island, Jeff Abel of Saltwest Naturals demonstrates how to harvest sea salt using steam evaporation and a unique solar evaporation process. Saltwest is one of a handful of artisan sea salt producers in Canada, and is the only commercial solar sea salt harvester in Western Canada. Using large steam evaporation kettles, the salt harvestry produces artisan flaked fleur de sel, a mineral-rich sea salt with distinctive irregular crystals and a crunchy texture. Flaked sea salt is prized as a finishing salt, which adds flavor to vegetables, eggs, fish and meat, as well as to chocolate and caramel. Saltwest also harvests solar sea salt, a rarity in Canada and the Pacific Northwest, where the wet, windy Pacific maritime climate poses challenges to salt harvesters. Taking advantage of the favorable summer months on Vancouver Island, Saltwest developed unique solar evaporation greenhouses to produce sun-dried salt. Sun-dried sea salt has larger crystals and retains more beneficial trace minerals than steam-evaporated sea salt. France's star chefs have made the sea salt from Brittany world famous. It's harvested by hand,not refined. and contains no chemcial additives. But recent years haven't been kind to salt farmers.After two bad harvests,they're counting on this year being a success. Lucky for them,the weather is cooperating this year - the sun is shining and it's not raining very much. Those are good conditions for the traditional production methods,allowing the brine to flow from basin to basin as it has for more than 1,500 years. In the 1970s,the future of Brittany's salt business hung in the balance. But a handfull of hippies jumped in to save the tradition and they now run the business as a co-operative.

소금 많이 뿌리면 짜지않을까 걱정될수도 있겠지만, 생각보다는 짜지않아요. 과일잼이랑도 잘 어울리고 바삭바삭하고 담백해서 좋은 스콘이랍니다. 반죽을 차가운 상태로 유지하면 결 따라 잘 부풀어 오르니 반죽이 물러지지 않도록 주의해 주세요. : - ) ○분량: 지름6cm 원형커터로 잘라서 7개/14개 ○난이도:★☆☆☆☆ ○도구: 유니버셜 컨벡션 오븐, 직경 약6~6.5cm 정도 원형 커터, 지름 30cm 볼, 스크래퍼, 체, 밀대 등 [배합표] 재료 7개분|14개분 -------------------------------------------------------- 강력분 100g|200g 박력분 150g|300g 베이킹파우더(선인) 13g|26g 게랑드 토판 천일염 4g|8g 설탕 75g|150g 무염버터 70g|140g 달걀 55g|110g 무가당 동물성 생크림 50g|100g 우유 25g|50g -------------------------------------------------------- 총반죽 무게 542g|1,084g * 게랑드 토판 천일염(장식용) 적당량 ※ 소금은 취향껏 다른 소금으로 대체 가능합니다. [준비하기] - 버터는 깍뚝썰기해서 냉장고에 넣어 사용직전까지 차갑게 보관해 둡니다. - 달걀, 생크림, 우유를 비이커에 계량하고 달걀 멍울을 풀고 섞어요. 사용직전까지 냉장고에 차갑게 보관해 둡니다. [만들기] 1. 박력분, 강력분, 베이킹파우더, 설탕, 게랑드 소금을 볼에 계량하고 2~3회 체에 내립니다. 2. 차가운 버터를 볼에 넣고 스크래퍼로 잘게 잘라 부슬부슬하게 만들어요. 3. 버터가 잘게 잘라지면서 가루분과 섞여 부슬부슬한 상태가 될 때까지 자르듯이 섞어요. 4. 미리 계량해서 섞어 둔 달걀, 생크림, 우유를 넣고 스크래퍼로 자르듯이 부슬부슬하게 섞어요. 대충 반죽이 섞였으면 비닐에 담아요. 5. 비닐채로 손바닥으로 납작하게 눌러서 한덩어리로 만들고 묶어 밀봉한다음 냉장고에서 하룻밤 휴지시켜요. (냉장고 야채칸에 넣어서 하루 이틀정도 더 보관 가능) 6. 반죽이 손이나 작업대에 들러붙지않게 덧가루(분량외/강력분)를 작업대와 반죽에 살짝 뿌려 주세요. 7. 밀대로 밀면서 서너번정도 접은 다음, 약3cm 정도의 반죽 두께로 밀어 펴주세요. (작업 도중에 반죽이 물러지면 냉장고에 다시 반죽을 넣어 단단하고 차갑게 만든 다음 작업해요.) 8. 지름 약6~6.5cm정도 되는 원형커터로 반죽을 찍어요. Use cold ingredients when making scones, otherwise the butter will melt fast and the dough will be messy and hard to work with. [How to make sea salt scones] 1. Put bread flour, cake flour, baking powder, sugar and salt into a large bowl and sift them together. 2. Add the cold butter. Using a pastry cutter or your fingers, cut the butter into the flour until it is fully incorporated and the texture is like sand with no large lumps of butter. 3. Add the cold egg, whipping cream and milk and mix together until just blended. Do not overmix. 4. Put the dough in a plastic bag and refrigerate the dough for at least 1 hour and up to overnight. 5. Sprinkle a little flour on the dough. 6. Roll the dough out to about 3cm with a rolling pin and then fold it in half. Turn the dough 90 degrees and then repeat this process for about 3 folds. 7. Use a 6cm pastry cutter, cutter to press into the dough. 8. Line a baking sheet with parchment paper. Place the dough on a baking tray 2-inches apart. 9. Sprinkle a little sea salt on the dough. 10. Bake in a preheated oven at 170-180℃ for approximately 23-25 minutes. Fleur de Sel Spread the sugar into a wide saucepan and pour over the water. Heat over medium heat, swirling the pan just enough to moisten the sugar. Try to avoid any direct stirring of the pan, swirl it if you notice there are some remaining dry sports as it heats. Continue to cook until the sugar starts to darken. Keep an eye on it at this point because it can burn quickly toward the end. When the caramel is a deep amber color it will begin to smoke. Remove it from the heat and add the butter, stirring with a whisk until completely melted, then gradually whisk in the cream stirring until sauce is smooth. Sprinkle Artisan® Fleur de Sel to taste.
